Suddenly Fall!

I was blown away when I saw that the squashes are in at Paley's, our local farm market! Unfortunately it was closed by the time I got there - I took too long trying to get a picture of the incredible rainbow that was arching over the hills after a short but intense storm. So I couldn't buy one and make my famous squash and sweet potato soup with the ancho chili swirl!

oh so many varieties of squash, do they taste the same i wander.

Well I just took one look and thought "SOUP" - lol!
I've never been near anythinglike these - do you blend the soup?

Each one is a little different, and are different colors and textures. They are earthy and rich - they test best oven-roasted iwth a little butter or olive oil, and a touch of brown sugar. Then they are soft and creamy - delicious as is or in recipes. (Classic squash or pumpkin soup has sauteed onions and garlic, chicken or vegetable stock, and squash, blended smooth. There are many variations, of course! (one could make it with cheese, beer, cream, various herbs, or my special recipe mentioned in the post, among others!)

A wonderful shot. Your photo screams FALL, and I'm just not ready to go there yet. Sigh. . .school's in, it rained today for the first time, it's darker sooner. . .and I'm just not ready to head into the dark days yet. Well, reading about your soup brightens things up a bit. Soup is slow, and one can savor it, unlike the end of summer.
